Kiritsuke knife

The Kiritsuke knife from Jaws is ideal for those who have not yet worked with large knives but want to cut professionally.
It sits very well in the hand and is a real pleasure to work with. Our knife is highly valued by professional chefs as well as ambitious hobby chefs. Suitable for meat, fish and vegetables.
The blade is made of Damascus steel with 128 layers. The inner layer is made of hardened steel (61+/-HRC) and keeps the blade permanently sharp with appropriate care. Handle made of stainless steel and olive wood.
